And I’ve been using the “wrap the dough in a seeded towel” method. I place a clean towel on the table, dust a bit of rice flour on it, followed by teff seeds. Then I shape my dough, spritz it with water on the top and place it top down on top of the seeded towel. Then I wrap the dough baby in the towel and drop it into the banneton (which actually is a cheap basket from IKEA that’s narrower than any banneton I’ve seen). Than it goes into the fridge overnight. Works for me! 😉
