In reply to Maurizio Leo. Hi, when you suggest leaving more starter during refreshment, do you mean to leave, for example, 30g starter and continue feeding 30g flour and 30g water? Or do you mean, for example, 40g starter, 60g flour, and 60g water?

My starter grew by three folds yesterday after I fed it, at around 10am I didn’t feed it again, let it sit out went down a little by morning.
I discard some so I could feed it again.
Can I use it later tonight after it rises etc..
it’s still good correct? Do you have to discard everyday? I’m leaving on counter so I can get it robust so I can bake regularly. If I don’t make bread tonight with it should I feed again before bed?
