I omitted the main dough water altogether and next time I will hold some of the water back from the autolyse. I also turned it into 2 loaves concerned I wouldn’t be able to cook it as one large loaf. All that to say the loaves came out beautifully & utterly delicious. The rise could’ve been a little better, but with a little less water next time, I think it would perfect!
