Thank you @maurizioleo:disqus. I have the bread steel along with the batard and boule baking shells from @brodandtaylor. On my last sourdough bake I misted the inside of the batard shell and it seemed to help create that steam that you discuss above. My oven runs hot so it was suggested to use tin foil under the steel so the bottom of my bread wasn't so burnt. I would like to try to bake baguettes so can these be left uncovered or is there a special shell I need for this type of break baking?
