When I use Central Milling Organic Type 70 malted flour as the main flour for my loaf, it doesn't seem to build great gluten structure or an ear after baking. Should I not be using Type 70 malted flour for a sourdough loaf? Ty

Central milling has a 70 malted and 70 pastry. I’m assuming you used the 70 malted?
