Hi! Test ratios of starter:water:flour. The higher the ratio of water and flour, the longer it'll take for the starter to rise. If it's already fallen by the time you get up, just increase the water and flour feeding. I usually do 1:6:6. This works well with the temperature of my kitchen and my schedule. But during summer, I had to feed it 1:8:8. All the best!
