Which of the recipes in The Perfect Loaf might be a logical ‘next step’ for someone trying to gain experience and have some early success? The Fifty-Fifty? Other? Thanks a lot.

Was thinking of getting the B&T proofer as I always have trouble getting the right temperature during bulk fermentation. Do you think it will help with the proofer? Our temperature here is a constant 28C and will sometime reaches 32C
